Beef & Tomato Stew

I had a few cans of diced tomatoes that were about to be expired, as well as, some beef that I bought on sale, and half a bunch of cilantro that needed to be used, so what did I do? I made a simple stew. This simple stew is delicious and easy to make. This recipe makes about 6 servings.
Cooking Time: 1h 30mins
List of Ingredients:
1/2 medium onion
1 tbsp garlic infused olive oil (or plain olive oil*)
About 1 lb of beef chunks
3 cans of diced tomatoes (14.5oz)
1/2 bunch of fresh Cilantro
1/2 tbsp dried thyme leaves
1/2 tbsp dried oregano
1 tsp dried parsley
1 pinch of ground coriander
1 tbsp brown sugar
Salt & Black Ground Pepper
*If you’re using plain olive oil, add one crushed garlic clove.
Directions:
Dice onion then place it in your pot over medium heat with the olive oil. Let cook for a minute or two and stir occasionally.
Then add the beef let it cook with the onion for a few minutes, and add salt and pepper.
Add the diced tomatoes and stir to combine, let simmer for 5 to 10 mins.
While simmering, roughly chop the fresh cilantro, then add it along with the thyme, oregano, parsley, coriander and sugar.
Then stir, and taste to see if more salt is needed. Then, reduce heat to low, and cook for another 45 mins to an hour, to allow the beef to cook through.
Once the beef is cooked, serve over a bed of rice.
